Harvest Mâche While the Leaves Are Tender

Pick a few small outer leaves once the plant is established and has enough center growth to keep developing.

Harvest larger outer leaves or small mature rosettes for salads and fresh meals. Keep undamaged center growth when you want the plant to continue producing.

Use mature tender leaves promptly in salads, sandwiches and bowls. Mâche is prized for a soft texture, so fresh harvests are especially useful.

Mâche is a delicate green. Harvest close to mealtime, handle the leaves gently and wash only what you plan to use.

How to Harvest Mâche

For repeat harvests, use clean scissors to take outer leaves while leaving the center of the rosette growing. For a larger meal, harvest a fuller rosette when it reaches a useful salad size. Avoid crushing the tender leaves during harvest.
