Grow a tender, mild leafy green at home. Claytonia—also called miner's lettuce—has soft leaves and crisp stems that work well in fresh salads, sandwiches, wraps and simple meals.

How to Harvest Claytonia
Harvest young, tender leaves and stems for small salads, sandwich toppings and garnishes.
Snip outer leaves and stems while leaving the center of the plant growing for future harvests.
Harvest larger leaves and stems before they become tough. Use mature harvests in salads or add them near the end of cooking.
Use clean scissors and take only what you plan to eat. Regular selective harvesting helps keep fresh growth coming.
