Grow a tender, mild leafy green at home. Claytonia—also called miner's lettuce—has soft leaves and crisp stems that work well in fresh salads, sandwiches, wraps and simple meals.

1) Claytonia salad with lemon, olive oil and herbs. 2) Add fresh leaves to a turkey or veggie sandwich. 3) Fold Claytonia into a wrap with hummus and crunchy vegetables. 4) Top soup or grain bowls with fresh leaves just before serving.

HARVEST GUIDE

How to Harvest Claytonia

Harvest young, tender leaves and stems for small salads, sandwich toppings and garnishes.

Snip outer leaves and stems while leaving the center of the plant growing for future harvests.

Harvest larger leaves and stems before they become tough. Use mature harvests in salads or add them near the end of cooking.

Use clean scissors and take only what you plan to eat. Regular selective harvesting helps keep fresh growth coming.

Cut tender outer leaves and stems above the growing center. Avoid removing the whole plant when you want another harvest. Rinse gently, dry and use soon after cutting for the best texture.

How Much Should I Harvest?

    Harvest a small handful when you need a garnish or sandwich topping. For a side salad, harvest enough leaves and tender stems to loosely fill a bowl. Take smaller harvests more often rather than stripping the plant at once.
